Minions Corn Salsa Dip

I’m slightly starting to panic over the fact that Christmas is next week. I still have presents to buy, gifts to wrap, cards to write and send, and a few other blogging obligations to get to before I can truly breathe a sigh of relief and celebrate the holidays.  Time is going by way too fast!  I’m trying to tie up all of my loose ends before Christmas, so this week has been a super busy one for me!

I needed a break in a big way!  So I decided to get the  Minions © 2015 Universal Studios. All rights reserved. movie the week it was released.  I needed a laugh to pull me out of my holiday slump and I knew the minions could do that!  So midweek, I made myself a snack and took a break to sit back and watch Minions.  These funny and mischievous little guys had me feeling a lot better after a good laugh!  It was just what I needed!

Chips and salsa is one of my all-time favorite snack combos.  My love for that simple snack and Illumination Entertainment’s Minions totally inspired this recipe!  Since the minions kind of look like cute, little kernels of corn, I decided to whip up a quick and easy corn salsa dip to have while watching the movie.

This salsa-inspired dip is the perfect thing to make to use up some of those canned goods stashed away in your pantry.  And if you have any leftover bacon from breakfast (What? Leftover bacon???), this is a perfect way to use that up, too!

Minions Corn Salsa Dip

Ingredients

  • 15 oz. can sweet corn kernels, drained
  • 10 oz. can diced tomatoes & green chilies, drained
  • 3 oz. can sliced black olives, drained
  • 4 strips of cooked bacon, crumbled
  • 1 small lime, juiced
  • 1/4 cup white vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a big bowl, add the corn kernels, diced tomatoes, and black olives. Stir to combine.
  2. Add lime juice, olive oil, and white vinegar. Stir to combine again.
  3. Finish this dip off with crumbled bacon and salt and pepper to taste.
  4. Serve with chips and start dipping!

The green chilies have a little zing to them, but they’re not overwhelming.  If you would prefer to make this without the heat, substitute regular diced tomatoes instead.  This is the kind of dip that gets better as it sits. If you plan on letting everything soak up over a day or two, make sure to leave the bacon on the side until you’re ready to serve.  This dip also works great as a side for fish or a topping for burgers so you can enjoy it while having dinner and a movie at home!
