My Upside Down Tomato and Herb Puff Pastry recipe is currently one of my most popular posts. And for good reason! It's a delicious take on the upside down puff pastry trend made with simple ingredients. It's easy to prep and takes 20 minutes to bake into a fluffy and golden, savory tart!
But we're not here to talk about savory tarts today. Oh no! Bring on the dessert! So after making my savory puff pastry tart recipe, I started thinking about sweet puff pastry tarts to make. I landed on an easy strawberry shortcake idea made with sugar dusted pastry sheets, fresh strawberries, and whipped cream.
We're not baking these tarts upside-down-style. The only thing we're baking is the puff pastry, cut into four equal rectangles. Before baking, the pastry gets brushed with egg wash and sprinkled with sugar.
Once baked, the pastry is cut in half. Then, one half is topped with whipped cream and sliced strawberries. The other puff pastry half is placed on top and finished with a dollop of whipped cream and a strawberry.
Puff Pastry Strawberry Shortcake
This is such an easy summer dessert. It's light and fresh, creamy and dreamy with just the right amount of sweetness! If you prefer homemade whipped cream, you can use that instead of canned. But we're saving time and getting this delicious dessert on the table quickly!
Start the strawberry shortcake by lining a baking sheet with parchment paper and preheating the oven to 350 degrees. Then, unroll the puff pastry sheet. Use a sharp knife or pizza cutter to cut the pastry into 4 equal pieces.
Brush both sides of each puff pastry with egg wash. Then, sprinkle both sides with sugar and place on the prepared baking sheet.
Bake the puff pastry for 20 minutes, or until it's golden brown and flaky. Allow the puff pastry to cool completely.
Add a layer of whipped cream on the bottom half of the puff pastry. Then, add sliced strawberries on top. Place the other half of the puff pastry on top.
Before serving, add a dollop of whipped cream on top of the pastry and garnish with a strawberry slice and mint leaf.

Ingredients
- 1 sheet frozen puff pastry thawed
- Egg wash
- 3 tbsp. sugar
- Extra creamy canned whipped cream
- 3-4 cups fresh strawberries sliced
- Optional: mint leaves
Instructions
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
- Unroll the puff pastry sheet and cut it into four even pieces.
- Brush each side of the puff pastry with egg wash and sprinkle with sugar.
- Bake for 20 minutes, or until golden brown and flaky.
- Allow the puff pastry to cool. Then, cut the pastry horizontally in half.
- Add a layer of whipped cream on one half of the puff pastry and place sliced strawberries on top.
- Place the other puff pastry half on top. Then, add a dollop of whipped cream and a strawberry and mint leaf on top.
- Serve immediately.
Notes
Top this puff pastry dessert with as little or as much whipped cream and sliced strawberries as you like! I found that just a small layer of each was just enough to make this a completely satisfying summer dessert.
