Sheet Pan Bourbon Salmon with Potatoes and Kale

Bourbon glazed salmon, fingerling potatoes, and kale are roasted on a sheet pan for a simple, but flavorful, one pan, Irish inspired meal.

Everyone is a little Irish on St. Patrick's Day, or so the saying goes.  While Americans have adopted corned beef and cabbage traditions, I decided to look into some possible Irish meals to make during the month of March.  Once I read that salmon is a popular fish in Ireland, I knew I'd be adding it to our menu.

I tend to add salmon to my Hungryroot order just about every delivery.  So when I saw the new Bourbon Glazed Salmon available, I had to try it!  It's flaky and flavorful Atlantic salmon with a sweet bourbon glaze.  It's so delicious and the prep work is already done.  All I had to do was pop it in the oven!

Once I settled on making the bourbon salmon, I had to figure out something to serve with it.  What's more Irish than potatoes?  So I made a sheet pan salmon with fingerling potatoes.  I used fingerling potatoes because they're buttery in flavor and cook faster than regular potatoes.

I also threw in some chopped kale - another Irish food.  The kale crisps up nicely after being massaged with olive oil and tossed with garlic.  Not only does the kale give this dish a delightful crunch, it adds a little St. Patrick's Day color to it.

Sheet Pan Bourbon Salmon with Potatoes and Kale

If you're looking to make something different for dinner this St. Patrick's Day, grab a sheet pan and whip up this easy salmon, potatoes, and kale recipe.  All it takes are a few groceries from Hungryroot and about 30 minutes!

The first step in making this dish is preheating the oven to 400º and lightly oiling a sheet pan.  Then, we're going to slice the fingerling potatoes in half and add them to a mixing bowl. Add olive oil, Italian seasoning, and salt and pepper to the potatoes.  Mix to coat the potatoes evenly.

Then, transfer the potatoes to the sheet pan.  Make sure that they're sitting cut-side-down and place them in the oven for 15 minutes.

While the potatoes are cooking, add the kale to a mixing bowl with minced garlic and olive oil.  Massage the kale to soften it and coat it with olive oil.  Then, toss everything together to evenly distribute the garlic.

After 15 minutes, remove the pan from the oven and push the potatoes off to one side of the pan.  Add the kale and bourbon salmon to the empty side of the pan.  Place the pan back into the oven to cook for another 15 minutes.

Once the potatoes are fork tender, the kale is crispy, and the salmon is cooked through, remove the sheet pan from the oven.  Divide the salmon, kale, and potatoes between two plates and serve.

Ingredients
  

  • 2 tbsps. olive oil
  • 1/2 bag Little Potato Company Fingerling Potatoes halved
  • 1 tsp. Italian seasoning
  • 1 clove garlic minced
  • 4 cups chopped kale
  • 2 Bourbon Glazed Salmon filets
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees and lightly oil a sheet pan or spray with non-stick cooking spray.
  • Add potatoes to a mixing bowl and toss with 1 tbsp. olive oil, Italian seasoning, and salt and pepper.
  • Add the potatoes to the pan, cut-side-down, and roast for 15 minutes.
  • While the potatoes are cooking, add the garlic, kale, and 1 tbsp. olive oil to a mixing bowl.
  • Use your hands to massage the olive oil into the kale. Then, toss the garlic and kale together.
  • Remove pan from the oven and push the potatoes to one side of the pan.
  • Add the kale and salmon to the empty side of the pan. Place pan back into the oven and cook for 15 minutes more, or until the potatoes are fork tender, the kale is crispy, and the fish is cooked through.
  • Divide the salmon, potatoes, and kale between two plates and serve.
