Tomato, Cucumber, and Radish Salad

This Tomato, Cucumber, and Radish Salad is simple and refreshing! It’s made with vine tomatoes, mini cucumbers, radishes, fresh basil, mozzarella, and a drizzle of balsamic glaze.

I love this time of year, right before it gets super hot, and the veggies in our garden start surprising us with their appearance.  I’ve been thoroughly enjoying everything our little garden has offered so far.  We’re still waiting on tomatoes, peppers, eggplant, green beans, and onions, but the strawberries, snap peas, and radishes are being picked almost as soon as they’re good and ready!

One night, I was deciding what to make with dinner.  I had everything I needed to make a Caprese salad with tomatoes, mozzarella, and basil from the garden.  But then, I saw that our radishes were getting big and beautiful!  So I picked a couple to add to my salad.  Then, I grabbed a couple mini cucumbers from the fridge and put this salad together.  It’s been on repeat every since!

While I love a good Caprese salad, I’m glad I changed things up!  The cucumber adds another level of crunch and freshness while the zip from the radishes will totally wake up your tastebuds!  Finish with a light drizzle of balsamic glaze and you’ve got yourself a delicious summer salad!

Tomato, Cucumber, and Radish Salad

If you’re still waiting for your tomatoes to pop, I suggest using an on-the-vine variety from the store (okay, I’d suggest them for anything, really, they’re so good).  And I love mini cucumbers because their skin isn’t as tough as a regular cucumber.  No peeling required!

Let’s get started!  First, we have to chop up the tomatoes, cucumbers, and radishes.  I like to cut the tomatoes into thin wedges.  The cucumbers get cut into half moons and the radishes are sliced thin.  Then, add everything to a mixing bowl.

Give everything a quick toss.  Then, we’re going to add the fresh mozzarella.  I like to use ciliegine.  Before adding it to the salad, I cut it in half.

Season the salad with salt and pepper and add the olive oil and fresh basil.  Toss again and transfer the salad to a salad bowl.

Before serving, drizzle balsamic glaze over the top of the salad.  Then, enjoy!

Tomato, Cucumber, and Radish Salad

Ingredients

  • 2 mini cucumbers, cut into half moons
  • 2 campari tomatoes, cut into thin wedges
  • 1-2 radishes, sliced thin
  • 3/4 cup ciliegine mozzarella balls, halved
  • 1 1/2 tbsp. fresh basil, chopped
  • 1 tbsp. olive oil
  • Salt and pepper, to taste
  • Balsamic glaze

Instructions

  1. Add the cucumbers, tomatoes, and radishes to a mixing bowl. Toss to combine.
  2. Add the mozzarella balls and fresh basil.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Toss to combine and spoon into a salad bowl.
  5. Drizzle with balsamic glaze before serving.
