Watermelon & Mint Slushie

It definitely feels like hot, Summer weather around here lately! I’m talking 90’s (although I know that’s nothing compared to the brutal heat being felt out west)! So I have been making a conscious effort to up my water intake. Of course, it’s only so long until I get bored with a plain, old bottle of water.  So instead of giving up on my goal, I am finding other ways to get the hydration I need during the day.  Especially since I tend to be more active during the Summer!

I’ve never been much of a juicer.  This recipe is probably as close as I’ll ever get to juicing. It’s inspired by a watermelon and lime drink recipe I read a few months ago in a nutrition book. To up the hydration factor, I decided to add coconut water. I turned my watermelon and mint drink into a slushie by blending all of the ingredients in my Oster Blend-N-Go with ice!  There’s not much to this drink, but it’s so refreshing!  

A lot of watermelon beverage recipes seem to strain the watermelon pulp after pulsing it in the blender.  Even though it might not look as pretty as a strained glass of watermelon juice, I like to make sure I’m getting the benefits of the whole fruit.  So I kept the pulp in there.  You hardly even notice it since this drink has the consistency of a slushie. Of course, this is way healthier than a convenient store slushie since there’s no sugar, or really anything else, added to it (making it a good option for kids, too)!

Watermelon & Mint Slushie


  • 1 cup chopped, seedless watermelon
  • 1/2 cup coconut water
  • 3-4 mint leaves
  • 1 cup ice cubes


  1. Add chopped watermelon to blender and pulse until smooth.
  2. Add coconut water, mint leaves, and ice. Pulse again until a slushie consistency is achieved.
  3. Pour into a glass and enjoy!

I’m so hooked that I basically drank half a watermelon last week! But that’s okay! Watermelon has a lot of benefits. It’s full of vitamins, beneficial to your heart, may aid in weight loss, it’s good for your skin and hair, and it’s a cancer prevention food. Coconut water’s not too shabby either! It packs a lot of the same benefits as watermelon, so drink up!
