There have been so many times when I'm working on one idea and another pops into my head. Soon enough, I'm scrambling to find my brainstorming notebook to jot down all of my ideas before they disappear. That's kind of what happened with this recipe. Oddly enough, I wasn't even working on a recipe at the time. I was working on a Halloween wreath!
But somehow during that craft session, I came up with the idea to take regular ol' cream cheese stuffed celery sticks and dress them up like the Bride of Frankenstein. Not only would these be a fun Halloween snack for the kids, but they'd also look great on a Halloween veggie platter!
Old Hollywood movie monsters are my favorite. Last year - when there was nothing else to do - I started watching some classic Halloween horror movies like Dracula, The Wolf Man, Frankenstein, and The Bride of Frankenstein. I guess you can say that this classic snack was inspired by the Bride of Frankenstein's classic hairdo!
Bride of Frankenstein Celery Sticks
Frankie's boo's hair is red with white streaks on each side. But our spooky celery bride has white hair with green streaks. To make our Halloween celery sticks a little more animated, I added edible eyeballs (or you can use black olives) and cut lips out of red peppers. Do you get my vision for this snack?
The first thing you want to do is clean the celery and cut into sticks. Then, start filling them with cream cheese and add some eyes on top. I used edible eyeballs, but you could also use black olives to create the eyes.
Slice some red pepper (roasted or grilled red peppers will work best for this) into tiny lip shapes. Then, place them at the bottom of the celery sticks.
The Bride of Frankenstein was also stitched up on her neck. So if you want, you could cut tiny strips of ham or prosciutto and place them towards the bottom of the celery sticks.
All that's left to do is serve up this spooky snack idea on a plate or even a Halloween cheese board!

Bride of Frankenstein Celery Sticks

- Roasted red peppers or grilled red peppers

Instructions
- Clean and cut the celery into 5-6 inch sticks.
- Spread cream cheese onto each celery stick until filled to the top. Place eyeballs onto the celery sticks, leaving room at the bottom for pepper "lips."

- If desired, cut ham or prosciutto into thin strips and place them near the bottom of the celery sticks to create "stitches."
- Serve this spooky snack on a Halloween vegetable platter or cheese plate, or enjoy as is!
