We usually have a small spread of appetizers for Super Bowl Sunday. This year, I wanted to switch things up from our usual choices. I'm still making some of our favorites like jalapeño poppers, Buffalo chicken, and mozzarella sticks. But I also decided to make some homemade apps like my Pepperoni Pizza Puff Pastry Bundles.
I thought about making sausage stuffed rolls, but my husband isn't a huge fan of sausage and peppers. So instead, I decided to make rolls stuffed with Parmesan style meatballs. These rolls are basically the same concept as my sausage stuffed rolls. But the refrigerated biscuits are rolled out and filled with Italian style meatballs, sauce, seasonings, and cheeses.

These meatball stuffed rolls are an easy, last minute appetizer to add to your football party spread! Once they're all put together, the rolls are brushed with garlic butter and baked until golden brown. They're delicious on their own, but I like to serve them with marinara on the side for dipping.

I like to use small, frozen meatballs for these. But you can use leftover homemade meatballs, turkey meatballs, or whatever kind of meatball you'd like to use. Make a homemade tomato sauce or use jarred marinara. It's completely up to you!

To start these rolls, we need to line a large baking sheet with parchment paper and preheat the oven to 375 degrees. Then, we need to pop open the biscuit containers and separate the biscuits.
Use a rolling pin to flatten the biscuits. You want them to be about 4-5 inches in size so they can easily be stuffed.

Next, we're going to add a meatball to the center of the biscuit dough. Add a dollop of sauce on top, followed by a sprinkle of Parmesan cheese and shredded mozzarella cheese.

Now, take the edges of the biscuit dough and pull them into the center. Press the edges together to seal the seams. Place the stuffed rolls onto the prepared baking sheet.

In a small bowl, melt butter and mix in garlic powder. Brush the mixture on top of each biscuit and sprinkle with Italian seasoning. Then, bake the stuffed rolls for about 15 minutes, or until they're golden brown.

Allow the rolls to cool slightly before serving (they'll be piping hot inside). Serve them alongside extra marinara sauce for dipping, if desired.
