Spicy Sriracha Chex Mix

What do you do when you have a whole bunch of Chex cereal left over from making treats during the holidays?  Make some Chex mix, of course! I mean, we could always eat Chex cereal for breakfast, but I'm more of a cereal-as-a-snack kind of girl.  I'm a big fan of snacking, in general!  So I decided to remake my old Sriracha Chex Mix recipe and turn it into a new and improved Spicy Sriracha Chex Mix!

I'm definitely more of a savory snacker and I'm not afraid of spice.  So this Chex mix ended up being perfect!  I seriously couldn't stop snacking on it!  You know when you eat something spicy and then you can't stop eating it?  That's how it is with this Chex mix! My original recipe had double the amount of Sriracha, but I cut it down this time around and it was just the right amount of spice!

My main goal was to make a Chex mix that was low salt, gluten-free, and big on flavor and I think I hit on all three.  Like most Chex mixes, this one starts with a combination of Corn Chex and Rice Chex.  Then, I added in some peanuts and cashews for a healthy crunch.

The Chex mix is coated with a spicy Sriracha sauce made with coconut aminos, ground ginger, and garlic.  Before popping it into the oven, I sprinkled on a generous amount of sesame seeds.  Then, it went into the oven for an hour to soak in all of that saucy, Sriracha goodness and become a toasty, little snack!

Before we jump to the recipe, let me just say that you could totally use low sodium soy sauce in place of the coconut aminos.  I prefer using coconut aminos.  To me, it tastes just like soy sauce, but it has less sodium and it's better for you!

And if Sriracha has a little too much kick for you, you can omit it from the recipe and still have a nice and savory snack mix to nosh on!   But honestly, it's a keeper.  Start with a small drop and adjust the heat from there!

Ingredients
  

  • 3 cups Rice Chex
  • 3 cups Corn Chex
  • 2 cups roasted peanuts
  • 2 cups cashews
  • 1/2 cup coconut aminos
  • 2 tbsp. Sriracha sauce
  • 1/2 tsp. ground ginger
  • 1 clove garlic minced
  • 3 tbsp. sesame seeds

Instructions
 

  • Preheat oven to 250º and prepare a baking sheet with parchment paper.  
  • Combine Chex cereal, peanuts, and cashews in a large bowl.  
  • In a small bowl, combine coconut aminos, Sriracha, ginger, and garlic.
  • Pour the Sriracha mixture over the bowl of dry ingredients and stir.
  • Spread the mix evenly on a baking sheet and sprinkle with sesame seeds.
  • Bake in the hour for an hour.
  • Allow the mix to cool completely and serve, or store in a sealed container for future snacking!
