There are three ingredients that I always seem to have on hand lately - strawberries, avocados, and microgreens. I have been eating strawberries as a snack or dessert almost daily and I've had avocado toast almost every morning for breakfast. And ever since I started growing microgreens, I've been throwing them on top of my morning avocado toast or using them in salads or on sandwiches and burgers.
I'm kind of obsessed with microgreens, to be honest. I bought a packet of seeds from the Dollar Tree on a whim. They took off in their little seed tray (also purchased from the dollar store) and as soon as I started eating them, I knew I had to go back to the store to stock up on more seed packets. They're a small, but mighty food that can be used in so many ways.

Why are Microgreens So Trendy?
Microgreens have become pretty trendy over recent years and for good reason! Not only are they super easy to grow, but they're packed with nutrients, too.
- They're packed with vitamins and minerals like vitamins C, E, and K and also potassium, iron, and magnesium.
- They're loaded with antioxidants.
- They may help lower cholesterol and are a heart healthy food.
- The kale and cabbage microgreens I'm eating are also good for digestion.
- Microgreens can help boost immunity.
- They're good for bone, skin, and eye health
And studies show that consuming microgreens contain more essential nutrients over the mature plants. In fact, microgreens have a lot more nutrients in just one cup or handful! The amount does depend on the type of microgreens you're eating, but they're all really good for you!

So let's bring it back to the other ingredients - avocados and strawberries. Man, they just go so well together! The buttery creaminess of the avocado and sweet, juicy strawberries are so, so good! Toss them on top of toasted sourdough (or some other good bakery bread) with microgreens on top and you've got yourself a fantastic meal to start your day!
Strawberry Avocado Toast with Microgreens
Not only is this avocado toast recipe a delicious breakfast option, it's also great as a springtime brunch or lunch. You can enjoy it as is, but I also like to add some crumbled feta cheese on top. It gives the toast a total salty-sweet flavor combo.

To start this avocado toast, first we need to toast our bread. Do yourself a favor and get some good bakery bread to make avocado toast. It's so worth it! I like to use sourdough, but seedless rye is good as well. Toast the bread to your desired doneness.

Then, in a small bowl, mash the avocado with a fork. It doesn't have to be totally smooth, but you want it smooth enough to spread. If you want to prevent it from browning too fast, add a light squeeze of lemon to the mashed avocado and stir it up.

Spread the avocado onto both pieces of toast and add some microgreens on top. Save a little on the side to add between layers.

Next, place the sliced strawberries onto the toast. Spread them out evenly so you get strawberry in every delicious bite!

Finish the toast by adding the rest of the microgreens on top along with some crumbled feta cheese, if desired. Serve immediately.

Strawberry Avocado Toast with Microgreens
Ingredients
- 2 slices sourdough or other good bakery style bread
- 1 medium avocado
- 2-3 large strawberries sliced
- 1 cup microgreens
- Optional: lemon juice
- Optional: feta cheese crumbled
Instructions
- Toast the bread to your preference.
- In a small bowl, mash the avocado. If desired, add a splash of lemon juice to prevent browning.
- Spread the avocado onto each piece of toast.
- Layer the strawberries and microgreens onto the toast.
- Add crumbled feta cheese on top, if desired, and serve immediately.

What do you do if you don't have microgreens? Well, you could still enjoy this avocado toast without them. Or I would suggest adding alfalfa sprouts on top instead. And if you can't find alfalfa sprouts, try adding some fresh herbs like chopped basil or mint.
