Sweet Relish Chicken Salad

Up your chicken salad game with the addition of sweet relish! Sweet and tangy relish adds a delicious flavor while Vidalia onion gives it an extra sweet crunch.

You know how some people's weakness is candy, ice cream, or chocolate?  It might sound silly, but mine is rotisserie chicken.  At certain times when you hit the grocery store, they're coming right out of the rotisserie.  They're still hot in their containers and smell amazing!  That right there is my weakness.

So I usually always end up buying one - with or without a meal plan or sale - and eating part of it for lunch that very day.  The leftovers get shredded for freezer portions.  But this time of year, I love to turn the leftover chicken into homemade chicken salad.

I recently won a giveaway from Mt. Olive Pickles and received a killer variety of their pickled products.  Once it came time to make another batch of chicken salad, I wondered if Mt. Olive's Simply Relish would be a tasty addition.  It was a total game changer!

I'm basically a fan of pickle-anything.  So we've been tearing through our Mt. Olive stash of jars.  The Simply Relish is sweet and tangy with big chunks of bread and butter pickles.  The addition of relish will change the way you make chicken salad sandwiches!

Sweet Relish Chicken Salad

If you're a fan of celery in your chicken salad, sorry, but I left it out.  You won't miss it because the relish has a slight crunch to it.  I also added Vidalia onion for extra crunchy sweetness.

Making this chicken salad recipe is really simple.  Chop up two cups of rotisserie chicken and place it in a mixing bowl.  You can leave it chopped or use a fork to break up and kind of shred the pieces.

Place the rest of the ingredients into the bowl and mix, mix, mix until everything is combined.

When you're ready to make a sandwich, I suggest using good bakery bread (cause I'm kind of a bread snob now) and adding a layer of lettuce.

Spoon the chicken salad onto the bread and enjoy!

Ingredients
  

  • 2 cups rotisserie chicken chopped
  • 1/2 cup Mt. Olive Sweet Relish
  • 1/4 cup Vidalia onion chopped
  • 1/3 cup mayonnaise
  • 1/2 tbsp. mustard
  • 1/4 tbsp. red vinegar
  • Salt and pepper to taste

Instructions
 

  • Place chicken in a mixing bowl. If desired, use a fork to break up and shred the chicken.
  • Place the rest of the ingredients into the bowl and mix until combined.
  • Serve on toasted sandwich bread with lettuce.

The chicken salad is also good with crackers as another quick and easy lunch option.  The salad will last 3-4 days in the fridge when stored in an airtight container.
