Plant Based Cheeseburger Quesadilla

This Plant Based Cheeseburger Quesadilla is an easy lunch or dinner made with soft tortillas filled with a vegan patty, plant based cheddar, and your favorite burger toppings!

I like to keep plant based burgers in the freezer for quick lunches.  They take minutes to make in a skillet and, just like a regular burger, can be loaded with so many toppings.  One afternoon when I was kind of lost on what to have for lunch, I remembered my burger patties.

I didn't have any burger buns, but what I did have was soft tortillas.  So I put together a plant based cheeseburger quesadilla that turned out to be pretty darn tasty!  The patty sat on a bed of arugula and was topped with plant based cheese, ketchup, and pickles.

I made my patty first.  After it was cooked, I kept the skillet hot and threw a tortilla in the pan.  Then, I added the arugula, burger, and my toppings.  Another tortilla goes on top and each side gets cooked until it's brown and toasty.

Plant Based Cheeseburger Quesadilla

This quesadilla is totally satisfying lunch that's pretty quick to whip up.  If you're not into plant based burgers, you could definitely sub in a beef or turkey burger.  Then, just add all of your favorite burger toppings inside before toasting the tortillas.

To start the quesadilla, we're going to add olive oil into a skillet and heat it over medium heat.  Add the plant based burger and cook according to the package, or until it's cooked through.  Remove from the skillet and set aside.

Give the skillet a quick wipe and add a soft tortilla to the pan.  Cooking over medium-low heat, add the patty to the tortilla along with a slice of plant based cheese and your favorite toppings.

Place the other tortilla on top and cook each side of the quesadilla for 1-2 minutes, or until toasty.  Remove from pan, cut into four pieces, and serve.

Ingredients
  

  • 1 tbsp. olive oil
  • 1 plant based burger patty thawed if frozen
  • 2 soft tortillas
  • 1 slice plant based cheddar cheese
  • Optional toppings: sliced tomato sliced onion, pickles, arugula, ketchup

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Place burger in skillet and cook 4-6 minutes on each side. Remove from pan, set aside, and wipe out skillet.
  • Lower heat and place a tortilla into the skillet. Top with burger, cheese, and toppings. Add other tortilla on top.
  • Cook each side of the quesadilla 1-2 minutes, or until toasty and golden brown.
  • Remove from pan, cut into 4 pieces, and serve.

I like to have my cheeseburger quesadilla with a side of ketchup for dunking.  You could serve it with fries or salad on the side, but I find that the quesadilla is just filling enough for me.
