Pumpkin White Chocolate Chip Bread

I was going through my cookbooks one weekend, wanting to find a new pumpkin recipe to make. I have somehow taken ownership over my mother's Sharing Recipes cookbook.  It was purchased from our old church back in the 80's.  While I was flipping through it, I found a recipe for pumpkin (or zucchini) bread that I decided to use, adding a touch of this and a pinch of that along the way.

I love taking a recipe and personalizing it.  That's the great thing about cooking!  You can play around with flavors and ingredients and make something absolutely delicious!  Like pumpkin bread!  I love pumpkin bread!  Actually, I love pumpkin anything!  But I wanted to add a little something-something extra to this recipe.  So I added some white chocolate chips to the bread for added sweetness.

Pumpkin White Chocolate Chip Bread

This bread is moist, full of pumpkin goodness, and has just the right amount of cinnamon.  It's perfect for fall and would even make an easy Thanksgiving dessert option.  It also makes two loaves.  Freeze one or give one to a friend, neighbor, or family member!

First, I mixed the dry ingredients in my mixer.  Then, I added the eggs, followed by the rest of the wet ingredients.  Finally, I folded in the white chocolate chips, putting 1/4 cup on the side to top the bread.

Once the bread is baked, you get this great mix of melted chocolate chips with chocolate chips that have still held their shape. A little mix and match "chippage," if you will!

If you don't like white chocolate, you can always use semi-sweet chocolate chips instead and still end up with quite the delicious pumpkin bread!

Pumpkin White Chocolate Chip Bread

Ingredients
  

  • 3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups canned pumpkin
  • 1/2 tsp. vanilla extract
  • 1 cup white chocolate chips + 1/4 cup

Instructions
 

  • Preheat oven to 350 degrees and grease two loaf pans.
  • Combine dry ingredients in a mixing bowl.  
  • Mix in eggs, oil, pumpkin, and vanilla.  
  • Fold in 1 cup white chocolate chips.  
  • Pour the batter into prepared loaf pans.  
  • Sprinkle the 1/4 cup chocolate chips on top of each loaf.  
  • Bake the loaves for 60 minutes, or until a toothpick comes out clean from the center of the bread.  
  • Cool pumpkin before slicing and serve.

    Good flavour but very heavy and dense - seemed more like a pound cake.

    3 1/2 cups are a letter choice for the flour. 2 eggs made it less dense, more fluffy and light. I prefer melted butter instead of oil. Love the addition of white chocolate chips
