From now until pretty much the end of the year, it's nothing but holidays, birthdays, and all sorts of celebrations!  So that means our family is going to be busy planning parties and holiday gatherings.  We just celebrated three birthdays, have Easter coming up, and then Mother's Day is next.

So it's the perfect time to experiment with springtime cocktails!  This Passion Fruit Pineapple Spritz is perfect for Easter, Mother's Day, a special brunch, or any other springtime celebration.  It's bubbly and bursting with tropical flavor!

Marie Brizard Passion Fruit Liqueur

I used Marie Brizard Passion Fruit Liqueur as well as pineapple juice and prosecco to create this cocktail.

At first sip, an audible "ooh" came out of my mouth after tasting the combination of slight tartness and tropical sweetness of the Passion Fruit Liqueur.  The liqueur pairs perfectly with other tropical fruit flavors, like pineapple.

And while it's fine to be enjoyed on the rocks, this liqueur will help you mix up a delightfully fruity and fun cocktail like this Passion Fruit Pineapple Spritz!

Passion Fruit Pineapple Spritz

You only need three ingredients to make this cocktail.  But if you really want to take the presentation up to another level, make some easy pineapple flowers as a pretty springtime garnish.

Mixing up this cocktail is easy.  First, add the Passion Fruit Liqueur and pineapple juice to a cocktail shaker filled with ice.  Shake to combine.

Strain into a glass and top with prosecco.  Then, serve immediately, or garnish with a pineapple flower.

Making the pineapple flowers is super easy!  First, cut a few really thin slices of pineapple with the core and pat them dry with a paper towel.

Then, place a wire rack onto a large baking sheet and lay the pineapple slices on top.

Bake the pineapple for 2-3 hours for 200 degrees.  The pineapple will be dried out and a bit crispy around the edges.

While the pineapple is still warm, add the slices to a muffin tin and let them cool and dry completely.

The pineapple slices will hold their shape once cooled.  Then, they can be used as a cocktail garnish.

Ingredients
  

For the cocktail:

  • 2 oz. Marie Brizard Passion Fruit Liqueur
  • 1.5 oz. pineapple juice
  • 4 oz. prosecco

For the pineapple flowers:

  • Fresh pineapple cut super thin with core

Instructions
 

For the cocktail:

  • Pour passion fruit liqueur and pineapple fruit in a cocktail shaker filled with ice and shake.
  • Strain into a glass and top with prosecco.
  • Garnish with a pineapple flower.

For the pineapple flowers:

  • Pat the pineapple slices dry with a paper towel.
  • Place slices on a wire rack over a large baking sheet.
  • Bake pineapple for 2-3 hours at 200 degrees. Slices will be dried and crisp around the edges when done.
  • While the pineapple is still warm, place it inside a muffin tin and allow it to fully dry and cool.
  • The pineapple will hold its shape once cooled. Then, use it to garnish the cocktail.
