It's almost time for my husband to get back to his Friday night bowling league. That means our weekly, Friday pizza night goes from being grilled outdoors to being made indoors, in the oven.  I love my husband's grilled pizza, but there's so much cleanup afterwards! We legit have a table outside to prepare our grilled meals on.  On Friday nights in the summer, it becomes our pizza station.  It gets covered with pizza pans, flour, oil, sauce, cheese, toppings, and everything in between.  Pizza is better on the grill, but I don't miss the cleanup when we cook it inside again!

I'm all about "one pan and done" cooking.  We usually make our pizza in a pan, like a Sicilian pie, but I decided to change things up recently.  I've cooked our pizza in a cast iron skillet before.  I kept seeing recipes for pizza fries, so I decided to make a pizza and potato dish in a cast iron skillet.  Pizza and potatoes are basically two foods that I cannot live without. I mean, pizza is pizza. You can't go wrong with sauce, cheese, and toppings and potatoes are just so darn versatile!  You can do so much with a potato!  It just seemed kind of genius to put both foods together!

Loaded Veggie Pizza Potato Puffs

These Loaded Veggie Pizza Potato Puffs are the ultimate appetizer, snack, or meal! They're made in a small, 6.5 inch cast iron skillet and topped with bell peppers, onions, and black olives. Veggie pizza is one of my favorites to order when we takeout.  The chopped veggies and olives, along with the sauce and cheese, makes the flavor of this potato puffs pizza come pretty close to one of my favorite slices!

Loaded Veggie Pizza Potato Puffs

Servings 4

Ingredients
  

  • Approx. 1/2 - 28oz. bag potato puffs
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1-2 tbsp. each green bell pepper sliced black olives, sliced red onion

Instructions
 

  • Preheat oven to 420 degrees.
  • Grease two 6.5 inch cast iron skillets with olive oil. Spread potato puffs evenly onto the bottom of each skillet. Bake potatoes for 20 minutes. 
  • Remove from oven and spread sauce evenly onto each skillet.
  • Top with cheese, peppers, olives, and onions.
  • Place skillets back into the oven for another 10 minutes, or just until the cheese starts to boil. Serve with grated Parmesan, if desired, and enjoy!

I absolutely love this version of pizza. Sure, you can't exactly lift it like a slice and bite into it. I actually found that it's easier to enjoy with a fork, but go ahead!
